Gluten Free Banana Blueberry Muffins

Visiting my parents today so my mom and I decided to try a new gluten free recipe. They turned out delicious!

What you need:

  • 1 stick of butter (8 tablespoons)
  • 2/3 cup sugar
  • 1 egg
  • 1/2 cup sour cream
  • 2 ripe bananas
  • 1 1/2 cup gluten free flour
  • 3/4 teaspoon xanthan gum
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup blueberries

Mix and bake in muffin tins for 20 to 25 minutes at 350 degree Farenheit
